Lovely Lemon Cupcakes…

After seeing photos of these on the internet I realised I had to give them a try! Sometimes its a nice change to have a lighter fruity cupcake rather than a rich chocolate recipe! These ones are delicious and while I can see ways I could improve them next time I think they worked rather well! If you’d like to make them here’s how!

Ingredients – Cakes

One Batch of Basic Cupcake Recipe (available here)

2 Lemons

Lemon Curd

Method

1. Make the basic cupcake sponge as per the recipe.

2. Before baking add to the mixture the zest of two lemons.

3. Once baked remove from the oven and allow to cool.

4. Once cooled use a toothpick to create a small hole in the top of each cake. Fill a piping bag with lemon curd and using a bismarck nozzle pipe a dollop of lemon curd into the centre of each cake.

  2. Rhi says:

Do you need to refrigerate them once iced because of the cream cheese or can you keep them in a tin?

  3. Rhi says:

they keep in the tin fine 🙂

Yay! I’m glad! Did you enjoy the lemon ones? I think they might even be nicer than the chocolate ones hehe! If you filled the centre with lemon curd they stay really moist! x

Here I am making them again, it’s my auntie’s 60th so I have to make 60 cupcakes, I’m using your base vanilla and base chocolate and doing lemon curd filled, raspberry filled and choc filled cakes with icing. I’ve booked a day off to get it all done, thanks again for amazing recipe with fab results every time 🙂

Aww I’m glad you enjoy making them! I’ve got to admit I got a but over whelmed with cupcakes before Christmas but I’m looking for a new recipe to make next week! I feel a craving hehe! I don’t want to try to influence your baking or anything but the ultimate chocolate cake recipe I posted is really really worth a try as well!! Just as good as the cupcakes 🙂 I hope your auntie has a fabulous birthday!!! X
