Chocolate cupcakes…

Hello! I decided I would pop up the chocolate sponge recipe I used in my ‘Mocha magic’ post. Its a really quick sponge method and is great for any first time bakers! The recipe is a Mary Berry recipe so is pretty much flawless!

Ingredients

50g Cocoa Powder

6 tbsp Boiling Water

3 Large Eggs

50ml Milk

175g Self Raising Flour

1tsp Baking Powder (rounded)

100g Softened Butter

275g Caster Sugar

Method

Preheat the oven to 180C/160C Fan/Gas Mark 6. Put the cocoa powder in a large mixing bowl. Add the boiling water and mix well to a paste like consistency. Add all the remaining ingredients and beat until just combined. A few added tips I would put towards this recipe are, add the eggs to the mixture last. This way they don’t touch the warm chocolate which I fear might cook them a little! It might not cause a problem but I didn’t risk it when I made it! Also make sure the butter is very soft but NOT melted. If it’s hard the mixture will be hard to combine! Also use an electric hand whisk to speed things up, especially in this all in one method! This cake takes about 25-30 minutes to cook and makes either two 20cm cakes or about 12 large cupcakes. If anyone tries this recipe let me know how it works for you!
