I began the other day to make a Cappuccino Cake but, after a friend let me know she didn’t like coffee they became Mocha cakes. I made a chocolate cupcake sponge to begin with (some large some miniature, see above!). By making a chocolate sponge my coffee hating friend could have a cupcake (minus the topping!). I then made a coffee flavoured buttercream. I made up a standard buttercream recipe and then made up a small cup of strong instant coffee. I refrigerated the coffee until it was cool and then added it gradually to the buttercream to achieve a delicious coffee taste. When adding the coffee try not to add too much as it will stop the butter cream from holding together. If any of you would like the chocolate cupcake recipe let me know and I will post it!
